I think nearly all Hollywood fighters are equipped with Bay-5000 missiles. They hit whatever they're shot at and make big 'splosions...

I just checked out the Sidewinder, and I was wrong in thinking that there were alternate-guidance versions. However, the more recent versions have vastly improved lock-on and tracking abilities, and I presume that it's not such a huge leap-of-faith to think that one could possibly be locked on to a cold target. Or maybe they were dumb-firing them.
As for the Harpoons, I think they'll hit whatever it is you want them to, if you enter the coordinates right.
