One of the easiest ways I've heard of to deal with mice "humanely" is to take a shoebox and cut an "X" shape into one of the sides, press the X shape inward to allow entry, add some food inside, then tape the lid on. Theoretically, the mouse can enter, but not exit. Next morning, you can take the box, mouse and all, outside and chuck it into a field. The mouse will eventually chew through the box to freedom and you are less one pest.

We've never had opportunity to test this at my house because Squeeky has proven himself an excellent mouser. Though I will say that the same trap has worked on a much smaller scale for crickets.

You can take a piece of cardboard, put a piece of chocolate in the middle, and make a circle around it with mice-catching glue. It's a bit messy to scrape the mouse from the glue (and I'm fairly certain it's not a pleasant experience for the mouse), but if you throw it into some dust to cover the glue later it should be unharmed.
