My apologies for going on and on about this guy who just appeared out of the blue barely a month ago, but--wait, fuck you guys. My blog, my rules. It's actually reeeeeally easy, but it takes half a day because you have to bake a whole bag of potatoes for a long, long time. Once you've done that, you gotta scrape out all the insides of all the potatoes. Put a little of the peels in if you like the flavor.

Then, you make a mixture of milk and flour, heated on low, on the stove. Mix until you have the consistency of slightly runny paste. Add potatoes. Then add a bag of Monterrey Jack cheese. Then cook bacon in the microwave (makes it crispy that way) and smash into bacon bits. Add those too. Then chop some green onions. Just the green part. Put those aside.

Once the soup has cooked for about an hour, you can dish into bowls, use the green onions as a garnish, and serve with a dollop of sour cream if you desire. I can't give you measurements for any of this stuff because I do it all by look and feel. Someday I will bother to find out measurements. Someday.
