surprisingly enough, the eggplant parmesan was superb!
or to quote me, "F*cking Awesome!" 
here's how i made it. i kind of sort of followed a recipe from foodnetwork.com, but not exactly..

take 2 eggplants, cut them into 1/2" round slices and lay them flat on a cookie sheet. generously sprinkle salt over the slices and let them sit for about an ( Read more... )

hi! sorry. my computer usually sits on all day without me in front of it. most of my net usage comes off of Emily's computer, so i don't see who IM's me.. the best way to contact me is through this, myspace, or my cell phone.. or in person, but that's a little harder for you, being half the country away...

life's good for us. cold weather, but we stay warm. em finally landed a stable job, which is surprising in this economy, so that's going well for us! and i'm going back to school so i can change careers finally...

Im glad to hear things are going good for you two! Im very happy for you! Congrats to her on getting a good job too! So Texas is good, a little getting used to, things are a lot different here. I am enjoying the fact that it has been almost a year since I have seen snow! LOL. I switched jobs, which if you have been reading my blogs you know that already. I actually started my new job today, it is more like the atmosphere of the Hampton Inn, which is good, they were too snotty at the Marriott! I wanted to call you a couple of weeks ago, but I dont know if you still have your NY number or if you changed it. If you changed it text me, mine is still the same. It was nice to hear from you. Keep in touch, dont be a stranger.
