I'm the only no-cook in a very foody group. One of them is currently translating Messisbugo for a feast in three years (yes three--we'll have a lot of research and things to create to make yet) the last one had us making period benches, ceramic ware, and spoons just to be temporally and geographically correct.

From the Sent Sovi (14th Cent)
Almedroch-- Garlic Cheese Sauce
(I wont type in the whole thing unless you ask)
4 oz havarti cheese grated or chopped 2 tsp garlic pureed not chopped 2 1/2 tbsp water
-Boil water. -Run cheese and garlic though a food processor till they start to combine, but look to chunky. -Add hot water, and turn food processor back on for a moment. Ingredients will combine into a smooth spread. -Use a spatula to incorporate any water hiding at the bottom of the food processor.
I suspect the finer you grate the cheese and the garlic will make it easier to not use a food processor in its creation. Conversely, it is probably one of those things that can be done ahead of time and kept chilled.
