So you don't peel them before roasting? I've been trying that with regular purple beets, something I've never cooked before, and gosh my hands turn all sorts of colors when I peel them after roasting.

Latex gloves. Just don't do any prostate exams after. Or before.

Peeling is easier while still warm.
