Coconut and I have had a very love/hate relationship over the years. For a long time, I hated it, especially shredded. To me, it tasted like shredded plastic. I had the opportunity to sample (many times) this coconut cake. It was a wonderful, mouth pleasing experience each time. The cake was perfect, and accompanied by a glass of ice cold milk, made it the ideal dessert.
