sugar cookies in muffin tins?

Hey guys, I have been going nuts looking for a recipe that was posted here a couple years ago...I believe it was a sugar cookie base, cooked in muffin tins, with fruit pressed into it. There may have been more to it than that, but that is all I remember for sure. Basic enough, and I guess I could just use another sugar cookie recipe, but it was so ( Read more... )

Was it this Lemon Madeleines with Mango and Raspberry Curd recipe? The description says it's more cakey, and a madeleine pan is similar to a muffin tin.

The first link was all I could find in the community that seemed to be on par with what you're describing. The second has a sugar cookie recipe that works for cups.

I don't have the recipe you mention, but my family sugar cookie recipe is more of a thick, cakey cookie. Bonus, it requires no refrigeration :D

Don't tell mama I shared this recipe on the internet. She'll tan my hide. ;)

Aunt Minnie's Sugar Cookies

1/2 c.white sugar
1/2 c. packed brown sugar
1 egg
1/4 t nutmeg
1/4 t lemon juice
1/4 t vanilla
3/4 c crisco (do not use butter, the crisco is part of what gives it the cakey texture)
1 t baking powder
1/2 tsp baking soda
2-3 c. flour
1/2 - 3/4 c. soured milk (do not use commercial buttermilk, combine 3/4 c. milk with 1T vinegar or lemon juice)

cream sugars, egg, nutmeg, lemon juice, vanilla, and crisco in large bowl. combine baking powder, soda, and flour. add alternating to sugar mixture with sour milk until dough is soft and pliant, not sticky. You may need more or less flour or milk depending on humidity.

roll no thinner than 1/8", I personally like them about 1/4". Bake 8-10 min at 350*F.

I would look under the community tags "tart" and "tarts", and if that doesn't work -- people do get sloppy about it -- try "fruit."

If I were on a computer, instead of my phone, I would try looking myself. Please do let us know when you find this tartelet recipe!

If you haven't any luck, try doing a Web search for "fruit tarts, muffin pan", and you should do OK. Or search for "fruit tarts, muffin pan, sugar cookie", for several recipes that sound like exactly what you are seeking.

There is a Jamie Oliver recipe I've made in one large dish with fruit (his was peaches) and sugar cookie dough baked over the top. It's divine, and might work for smaller ramekins or muffin tins.

I can't seem to find it online, but it's here somewhere in a book if you'd like it.

So a Tarte Tatin, but with cookie dough instead of puff pastry or a pâte sablée? Interesting. (Although I suppose the classic pâte sablée isn't that far from cookie dough to start with, is it.)
