An attempt at apple and cinnamon ice cream

Yesterday I made something I'd never made before for various reasons but mainly because I don't have a freezer in my tiny studio flat, only a tiny compartment in my fridge that just about makes water hard. I'd read and seen on various blogs that you don't need a machine to make ice cream if you stir the mix regularly so I'd considered trying that. ( Read more... )

It's a basic custard base. The apples are a cut/soak/forget.

For frozen products, you've really got to ramp the flavor up until it tastes too strong at room temperature. Otherwise it's gonna be meh once it's cold. :)

I knew that and the custard was quite strong in flavour but it wasn't enough. Live and learn...

*nodnod* I usually go past 'strong' and into "this tastes so much that I don't want to eat it" when the custard's warm. Then usually, once it's ice cream, it tastes right to me. :D This does mean that my raspberry ice cream's custard will make your face pucker if you try it before it's chilled...

I find I get a better flavour on apple ice cream if I actually use half apples, half pears.

In case you don't feel like stirring :) It's a bunch of fun if you have a few friends who don't mind being silly for 10-15 minutes. I've noticed most people don't mind when they know ice cream is the reward.
