I saw a recipe once where zucchini was sliced in the same way that the cucumber is in this salad, then boiled for a few seconds and using as a gluten-free, healthy alternative for pasta. Weird, but omg yum!
I make something very similar to that sushi salad when I'm too lazy to make sushi. Omg soooo good! I de-healthify it by making spicy mayo to put in too (easy to make, it's just mayo, sriracha, and sesame oil). Yours is more beautiful than mine ever is, though. : )
