This sounds absolutely delicious. I may have to give it a go for a cookout in a few weeks. How ripe do you recommend the peaches be? Is it nice to have them a little firm and slightly under-sweet, or do you want to go all the way?

They should be ripe and sweet, BUT don't make this ahead of time. You may want to make it as close as 30 minutes away from your meal (but keep in mind that peaches can be a pain to peel, and all that chopping takes awhile). Do give it that 30 minutes to meld, though.

I made mine about an hour in advance with ripe peaches and it was good.

That seems like a great combination. I don't like raw tomaties so peach seems like a good substitute.
