A&P Spanish Bar Cake

My boyfriend's dad has fond memories of something called a Spanish Bar Cake from the old A&P grocery store in this area. His dad used to bring one home periodically. Yep, I have fond memories of that cake too...although I can still buy it here (I live in southern Ontario, Canada).
Like you, though for different reasons of course, I now prefer to bake my own, essentially because I like to know what's going into my baked goods because they end up in me!

Ooh yum, it looks a lot like my mom's carrot cake. Somewhat similar, ingredient wise, to her pumpkin cake (which is a recipe I must get from her... I digress). I wonder what it tastes like...

Anyway, yes, spring has sprung; I'm in Charleston, SC and my eyes are itchy... severe allergy time!

I live about 45 minutes west of you, and we have a chain called Ingle's that carries the Spanish Bar Cake if you ever want to try it to compare.

Oh, neat! You know, driving up to Flat Rock with my 7th grade students, I noticed an Ingles. Will have to check it out sometime!
