I've had a desperate need for something cheesy (apparently I'm a masochist when it comes to my stomach) and warm and happy for days, and mac and cheese totally fit the bill. I'm super picky when it comes to my mac and cheese, however-- boxed mixes, even as my kids love them, make me nauseous. Baked mac and cheese, however, is all thumbs up.

Slightly altered from this recipe. I added a dash of cayenne to the mixture and sprinkled mozzarella for color and a touch of seasoning salt on top. I split the difference on the breadcrumbs between panko and homemade, giving it a little more of an earthy taste. My daughter ate hers right up and I'm nice and filled and sleepy now. Passing on some leftovers to my parents when they arrive home late tomorrow from my mother's birthday trip (she needs everyone to know it's her birthday).

Great for a cold night. Now time to hibernate.
