Gooey chocolate slice

Made with love with my Xmas pressie - a kitchenaid! Wasn't as gooey as shown in the recipe but that's completely my fault. Read the full comic and recipe at a wishful pantry.

Gooey Chocolate Slice from One Perfect Ingredient by Marcus Wareing
100g dark chocolate, broken into pieces
100g unsalted butter, diced
3 medium eggs, separated
125g ground almonds (almond meal)
100g caster sugar
100g dark chocolate chips
Preheat the oven to 160°C fan forced (180°C / gas 4). Grease a 20 x 15 x 7.5cm baking tin and line with baking paper.
Melt the chocolate and butter in a bowl set over a pan of gently simmering water. Remove the bowl from the pan and whisk in the egg yolks followed by the almonds.
In a separate bowl, whisk the egg whites to stiff peaks, then slowly whisk in the sugar to make a meringue. Gently fold one quarter of the meringue into the chocolate mixture, and mix until smooth. Add the rest of the meringue and chocolate chips, and fold together until evenly combined.

Transfer the mixture to the tin and bake for 20 minutes. Leave to settle for 15 - 30 minutes, then lift out and slice.
