No luck finding game hens today, but I did score a 3 1/2 lb chicken. Cut it down the back and breastbone (cut them out, actually), then followed your recipe exactly. I trussed the half-chickens and put them cavity side down in a roasting pan.

It was delicious! Very, very moist and flavorful, but not at all cloying. Thanks for the recipe.
