I never heard of apple risotto before. Mushroom risotto, butternut squash risotto. But apple? Hmm. Interesting. Did you make it up yourself? I've only thought of pairing risotto with savory.

I had the idea first, but then I googled for recipes before making an actual attempt. I looked at the first three "apple ristto" recipes. One used apple cider instead of broth (something I'd like to try), the other two used actual apples like I did.

I keep my recipes on the intertubes where all can find them. By that I mean I tend to google for what I want when I need it, so I don't have anything stored for trade. I have started posting here about anything that I might be considered to have bragging rights over, so you're bound to get all my ideas.
