I bought lobster meat tonight and decided to do something different from a lobster roll. I put just a little bit of mayo in it, fresh black pepper and cilantro and of course cheese. I wish I had some corn!
There's a restaurant here in Austin that does lobster tacos: "Three mini tortillas filled with sauteed lobster, Monterrey jack cheese, sweet red pepper coulis and tomatillo pico." I am not a huge red pepper fan, but the sauce cuts through the richness of the lobster and cheese really nicely.
Iron Cactus. It's an appetizer, but along with the chips and salsa it's plenty for a meal for me. I've only ever been to their north location at the very top of 360, but I'm pretty sure the downtown menu is the same.
I'd be a little worried that the amount of cheese normally used in a quesadilla would overpower the lobster flavor- what kind did you use? And were you conservative with the quantity of cheese you used? This looks absolutely fantastic and downright yummy!
