This soup was really delish. It started out with me wanting to use up some stuff that had been hanging around in the fridge for a while, and ended up as a very satisfying Sunday dinner.
I give you: leek-potato-spinach-bacon soup topped with homemade croutons and smoked provolone!

leeks have a mild onion flavour - like, a leek is to a green onion as a green onion is to a regular onion.

and fyi, if you find that you don't like the texture of the leeks (most people are fine with it, but for some reason they bug me - they kind of squeak) it helps to blanch them before sauteeing them, or in a soup like this the pureeing takes care of it.
