Meringues, and a soup question

My daughter baked for her annual fundraising bake sale the other day. In addition to chocolate-chip cookies, oatmeal-raisin cookies, and mandlebread (mandlebrot), she made her trademark meringues.  Always so pretty!  (But I'm lusting for a macro-lens...)

I freeze curry with coconut milk it it with no problems.

Coconut milk freezes fine. I have thai green curry in my freezer right now. Mmmmm

I've had leftover cocont milk before, usually I just put it in a mason jar or whatever and leave it in the fridge. I left it for over a week and it was fine...

Meringues are one of my favorite treats... my mother makes mint chocolate chip meringues at Christmas. My nephew and I fight over them ;)

Coconut "milk" doesn't contain the casein and other things that make animal milk troublesome to freeze, and, to judge by my own experience, the lentil and vegetable base should lend itself beautifully to freezing.
