I tried this last night using tapioca flour/starch instead of polvilho, which is utterly not available locally, and I found that I had to keep adding flour to the mix, and adding, adn adding to the point where I'd added about 50% more than the recipe called for, and they still came out like pancakes!

Ideas?

Okay, so I made these with 1.5 cups of manioc flour + .5 cup of tapioca starch/flour, then followed the rest of the recipe, cooking at 375 for 30 minutes. Made for a good texture and springy cheesy-bread-ball, but it still looked nothing like the above pictures.
