The best thing about Vegas business trips are the stuffed dates at
Firefly. They're little bites o' heaven stuffed with almonds and bleu cheese in a red wine reduction.
I'm not especially gifted in the culinary arts; I googled and googled for recipes and found some that were similar enough (

here) to take the plunge and try to make them at home. The recipes sounded simple enough...
I took advantage of an extra set of hands in the kitchen. She reduced while I sliced and stuffed:
In my excitement, I forgot to pick up good bacon (we happened to have this in the freezer), THEN I forgot to place them "seam" side down first. I think the
Point Reyes bleu made up for those misses, though. (And there'll be more opportunities for improvement- this is a definite "do over".)
400 degrees and a little about 30 minutes later, the finished product:
These were ridiculously easy to make and eye rollingly, audibly "MMM" good.
