fill a sauce pan with finely minced fat back and render it in a steady supply over water over a medium-low heat. when the fat has completely rendered down to a liquid and all the water has evaporated, you have lard :)
then, cook your beans until they are just done and reserve some of the cooking liquid. here i used pinto beans, but you can really use whatever you like. add 1 tbsp of lard for each cup of beans you will use to a medium-hot saute pan and add onion and garlic, brunois cut, until lightly browned. fill your cup measure with beans, and then add liquid to cover. add half of this to the pan, cook until the beans begin to break down and then add the other half. when the beans are smooth, season with salt and white pepper to taste.
