I bought a pound of loukaniko, possibly misspelled, from the local Greek butcher. I don't like the seasoning, though. What can I do with it to hide the flavor, or am I doomed to feed it to the dog?

If it's the kind with leeks or other onions, don't feed it to your dog, because those are toxic for dogs. i hope someone can help you so that you can salvage your purchase :)

What if you stripped it of the casing so it was just ground meat, and then made something like a moussaka out of it?

Behold, the power of breadcrumbs. Strip the casing off of it and get a bunch (or make a bunch) of bread crumbs. It will dilute the flavor of the seasoning. You could then make some meat balls out of it - add some super flavorful sauce (like a spicy peppers and tomato sauce).
