The Conchigle is fairly easy... First make the sauce:
1/2 cup butter 1/2 cup plain flour 1 1/2 cup milk 1/4 cup grated sharp cheese, or 1/2 cup chopped mozzarella
Melt the butter in a saucepan, add the flour, and mix together so that there are no lumps. Add the milk and whisk. Once the milk is simmering, add the cheese of your choice, and whisk gently until the sauce is smooth.
Then, fill the bowl with boiled conchigle, spoon over the sauce, and sprinkle with crushed chilli, pepper, and parmesan :)
