if you sub a whole wheat tortilla and use refried beans made w/out lard or make them yourself, it can make it even healthier. i draw the line at low-fat cheese though...i'll take the real stuff. that's just a personal pref though.
but i'd probably make MINE just the way you described, cause it looks delicious!
Oh yeah, definitely -- there's no substitute for cheese.
If I were still living in a place where I could get my hands on Ranch Style Beans (alas, the UK does not sell them anywhere, it's a crime I tells ya), I would rinse them off and blend them in a food processor for low-fat beans. (All the lard, etc, rinses off while the lovely taste stays.)
I think there's also lower-fat versions of refried beans available in various brands. (But to get them I have to pay a fortune in the Mexican imports store, whereas I can buy the regular version on the shelf of any supermarket.)
looks wonderful! But out of curiosity, is there a reasonable substitute for guacamole/avocado if you're allergic to avocados? I've always just left it out, but wondered if it affected the texture as much as the taste, and not known what to do to remedy that.
