Can anyone recommend some good recipes involving broccoli rabe or beets?  (That is, I don't want them in the same recipe ( Read more... )

i saw that on epicurious, and it did seem really appealing! my combo of sausage & rabe in that pasta strengthened my suspicions, and yr recommendation has confirmed em. thanks!

I cube beets, carrots, sweet potatoes and potatoes and briefly parboil them, then toss them with oil, salt, spices, onions and whole unpeeled cloves of garlic (and sometimes hard tart apples, in season), then roast it all at about 400 degrees until the veggies are crispy on the outside and cooked through. YUM.

Also, the other day I had this amazing grilled cheese sandwich at a bar: sliced roasted beets, onions, peppers and a few other veggies with sharp cheddar on wheat bread.

whoa, that grilled cheese does sound amazing. if i had any beets on hand i'd totally try that right now for din.

and i will try out yr first idea, too; anything with roasted garlic & sweet potatoes wins me over.

Feta cheese, olives, and red bell peppers are also excellent with broccoli rabe. I am usually content to steam-saute it with garlic and either eat it as a side, on top of toasts, or with pasta. (with or without sausage) Try it in broccoli recipes.

Sweet beets! roast them with honey and eat them with a scoop of vanilla ice cream. You won't be disappointed. The earthy taste of the beets goes very well with the ice cream.
