I got some beautiful beets w/out the greens at the Farmer's Market today. I love beets but have never prepared them myself. Can anyone give me any good recipes?
when i get a bunch of beets i steam them all so that i don't have to worry about cooking them later--i just cut them in half and steam for 15 minutes or so. they are easier to peel cooked, since the peel slides right off.

beet greens are also yummy if you got a whole bunch--i don't usually eat the stalks, but the leaf part can be cooked like spinach.
