For Buffets, I've eaten at Bellagio, Treasure Island, and Mirage, and they were all excellent. Probably the most selection at Mirage, best desserts at TI, and more exotic at Bellagio. I hear Aladdin is very good as well.
For a really nice meal, I would recommend Sensi at the Bellagio. It's a mix of Asian, Italian, seafood and grill, and the kitchen is in the center of the restaurant. Of the gourmet restaurants there, it's also more moderate in price (relatively). And close to Jean Phillippe Patisserie for desert. :)
Mix at Mandalay Bay is also very good, especially at night, as it is at the top of their tower. Excellent views...and the food was pretty darn good as well.
FYI...I work at the Bellagio, so I can give you some info about any of their restaurants, as well as a number of the other ones at MGM MIRAGE properties. :)
Yay! My husband and I just got back from Vegas last night. The Mexican (Gonzalez Y Gonzalez) and the Italian (Il Fornaio) places in the NYNY hotel were awesome, in fact we ate at Gonzalez Y Gonzalez twice. Also, buffet-wise, we were very impressed with the one at the Aladdin hotel. They have different sections of different food - middle eastern, Mexican, Italian, American, seafood (that was really fresh) and "asian". It was also cool how vegetarian friendly it was. All reasonably priced. Hope that helps!
I love the buffet at the Aladdin. I've done the Bellagio and Paris buffets and think they're both overrated. Max's in the Aladdin as well has tasty noodle dishes if you're looking for something on the cheaper end. They also have 3 for 1 drinks =)
We live in Las Vegas, but have not tried all the buffets yet. The only one I was disappointed in was the Mandalay Bay. The buffet (Cafe Lago) at Caesar's Palace had the best food, but the selection is not as bountiful as some others. Still, what is better than fresh made Bananas Foster?
The best very expensive restaurant we have been to is Fleur de Lys (and we also love the one in San Francisco). The bar at L'atelier de Joel Robuchon is beautiful and fun, but not all the dishes are worth the price. For a less expensive, but still great experience, I recommend Bouchon in the Venetian Towers and Postrio on the Venetian Grand Canal. We also like Taqueria Canonita at the Venetian.
Both Delmonaco's and the restaurant at the top of the Eiffel Tower in the Paris are very good. I urge you to try something other than the steak at Delmonaco's. The lamb was fabulous.
The Bellagio has a great breakfast buffet but I wouldn't eat there every day unless you want to gain about a thousand pounds on vacation and spend a lot of money. For lunch and dinner the Flamingo has great shrimp and prime rib and the Aladdin was probably the best priced buffet with decent food. This was two years ago, so things might have changed a bit.

I also really liked the Wynn's restaurant "Red 8"--gorgeous, and excellent Asian-fusion dishes.
There is also an amazing Korean restaurant called "Ginseng" behind the MGM (still on the strip though, across from the monte carlo).
