Eggwhite freezes really well. I just pop them into freezer bags and mark how many are in there. I've never tried freezing the yolks though.

They freeze just fine; I'd put them 1 per ice cube tray so you know how many you've got and freeze them, then put them in baggies.

you can also try making ice cream recipes that don't call for eggs at all! I make a great vanilla ice cream that's literally just milk, cream, sugar and vanilla bean... I believe it's 3/4c sugar dissolved into 2c milk and 2c heavy cream. Split half a vanilla bean, toss it into the pot with the milk/sugar mixture and bring to a boil. Immediately take off heat, cover and let chill overnight. Freeze as per manufacturers suggestions.
