so, it's my friends birthday tomorrow, and i thought i'd make him a nice meal. i told him anything. anything.
and what does he ask me for?

meatloaf.

that's right. meatloaf. Now, the guys never had it before. he's jamaican and has grown up in the city. his mother cooks all sorts of wonderful jerk chickens, cajun/southern-american/caribbean feasts

I made a post about meatloaf awhile back and people gave fabulous recipes. If I could find my own, I'd give it to you. It would be perfect for your friend because it involves cayenne pepper which gives it a spicy kick I love. I'll have a dig around for it and see if I can find it.

I'm from the carribean, and I relate to the exoticness of meatloaf, bagels, andchicken fried steak. And Biscuits and Gravy, seriously...who thought this up?

I suggest a peppery tomato sauce.

YES! That's how my mom makes it, and it's amazing. It made meatloaf night into something to look forward to :)

I make mine with cracker crumbs, bbq sauce, salsa, brown sugar, A-1, worchestershire, and egg. I save some of the bbq/worchestershire/salsa/a-1/sugar mixture and pour it into indentations over the tops of the free-formed loaves.

My fiance loves it and so do my kids.

One of my favorite meatloaf recipes isn't very traditional, but its VERY nummy.

Its a meatloaf roll with broccoli and i think ham maybe inside and rolled up like a jelly roll. Then you melt cheese on top and make a sauce out of cream of mushroom soup. I have the full recipe at home if you are interested. :)
