OH and if you're sauteing (sp?) anything like meat or onions I strongly support the idea of chopping the stalks and adding them. I love the stalks and most people throw them away.

Collards can hold up to a whole lot of cooking. Chard is more of a sautee/stir fry kind of green. I'd stir fry it with the bacon drippings. Yum! Good luck with your meal. Sounds delish!
