Bison is very similar to beef, the flavor is just a little different and the meat a bit leaner. Cuts probably as you would with beef, my favorites are the rib roasts and tenderloins ( ... )

I know there were emu roasts and steaks (in addition to ground and sausages), but what part of the bird, I'm not sure.

Elk sounds wonderful -- we both enjoy venison.

I would guess most of the roasts and steaks come from the breast or thigh....can't think of anywhere else that would have enough meat.

I think I personally prefer elk to venison slightly, it's just a touch more flavorful.

Bison meat is FABULOUS!! It's leaner than beef, usually raised without hormones or pesticides, and has a much richer flavor. I've never actually prepared it myself, but I've enjoyed many the buffalo burger and even buffalo chili.
I've also heard that emu is quite tasty. Good luck!

Bison sounds great. And yes, it is raised without hormones and things, which is nice.

We've had bison pepperoni sticks, but never the plain meat. Perhaps I need to buy some of all these, and have a couple weeks of good cooking! :)

Never had emu, but I have had both bison and elk. Now I love to make burgers out of either ground bison or elk. Hmmm mmmm. They both are full of flavor and make a delicious burger. But that's not very Christmasy. haha But let me tell you, the taste of the burgers by far surpasses any normal "hamburger". I don't even mix anything with it other than maybe a little seasoning.

So what would I have? Buffalo steaks. The flavor is amazing. Just a little kosher salt/fresh ground pepper for seasoning. It's got a slightly sweeter and I guess you can say "richer" flavor.

I have not had elk as a steak, but I hear it's just as good. So I may go that way just to try it out. :)

But, don't cook it past medium! :O) If you do, they are truly disgusting. You can get away with a well-done beef steak (although not in my eyes) but not with the bison at least. I also suggest that you don't put a lot of seasoning or try to stick it with other flavors. No need to mask how delicious it is.

Hmm, perhaps I'll need to get some ground meat for burgers -- it could be a new Xmas eve tradition..hehehe.

So, definitely medium rare for either of the red meats. Will keep that in mind!

I think bison sounds great, and I'm leaning towards having some bison burgers for Christmas eve, perhaps. Mmmm, red meat. :)

No advice on how to cook it (other then RARE!!!! in my little opinion beef should never be cooked past medium) but I would go with elk roast or maybe steak and ask the person selling it what their favorite way to cook it is. Elk just screams a hearty x-mas dinner to me.

Yeah, I think I'm going with the elk. It was the most expensive, if I remember correctly, so that also makes it a bit more "special." AND, this is a surprise for my fiance, and I think he would be most impressed and happy with elk.
