Green Tomatoes

Hey all,
my mom just came in with a metric tonne [probably more like 2lbs] of green tomatoes, both regular and cherry size. what can we do with them, besides the obvious fried? (Which wouldn't work for the green cherry tomatoes anyway) I'm thinking casserole or tart?

My grandma used to make nice crispy sweet pickled green tomato slices. I have no idea how. I've also eaten regular pickled green tomato. Tasty.

I once read a recipe that I'd really love to try: green tomato mincemeat. Green tomatoes, apples, raisins, brandy, brown sugar, and I don't remember what else.
