That looks wonderful. I love the range of flavors that falls under the range of a risotto.

That looks absolutely devine. Butternut squash and apples are my favorite. Yum!

But I would like to add to the risotto being easy that I have a microwave cookbook that claims that the best way to make risotto is in the microwave. I've only done this once, but it was soooo easy and soooo delicious.

Taken from "The Well-Filled Microwave Cookbook":

"The carousel stirs and the waves penetrate every morsel, allowing you to pour in all the liquid at once".

They have a few different recipes but the basic idea is that you melt some butter, microwave the risotto & butter for 3 minutes (until it gets translucent), add in the rest of your ingredients (including the liquid), microwave until boiling (about 15 mins), stir, and microwave for about 12 more!
