i'm about to undertake my first punkin' pie ever, tomorrow night. i'm an old hand at crust but i've never done this kind of filling, because, well, i don't really care for it. but it was a request from my downstairs neighbor who wants to learn to do crust. i figure i can wing it. we're going to hollow out the pumpkins so we can carve 'em for jack 'o lanterns so i think getting the meat out might be tricky. we'll see.
ps- any tips about how long to roast the pumpkin meat, sans shell? i was thinking i'd just put it in the oven till it was mushy.
