They beckoned me from across the room, full, rounded, glowing faintly under the dim light from above. i'm about to undertake my first punkin' pie ever, tomorrow night. i'm an old hand at crust but i've never done this kind of filling, because, well, i don't really care for it. but it was a request from my downstairs neighbor who wants to learn to do crust. i figure i can wing it. we're going to hollow out the pumpkins so we can carve 'em for jack 'o lanterns so i think getting the meat out might be tricky. we'll see.

ps- any tips about how long to roast the pumpkin meat, sans shell? i was thinking i'd just put it in the oven till it was mushy.

This was my first pumpkin pie ever, so I'm no expert, but I'd probably put the meat in for 30 min. or so and check it every 5 min. after that. Good luck tomorrow night!

How sweet did it turn out with two cups of sugar? I don't want it really sweet.

It's not rot-your-teeth sugary, but it's a little sweeter than my grandmother's, which is what it's based on. You could probably start with 1.5 cups of sugar and taste it (if you're not squeamish about the raw egg), then add more if you want. I also went a bit stronger with the spices than Grammy always did. Hers only called for 2 level tsp. pumpkin spices, but I can't stand weak, watery tasting filling, and the extra cinnamon gives your tastebuds a good kick without being overpowering.
