Sweet Pepper Salsa

I really need a good recipe for black bean and corn salsa! Here's the trick - I want one I can safely preserve in pint or quart jars. I'm finding recipes all over the web but they aren't geared for canning. I'm able to process stuff in either a hot water bath or a pressure canner. Anyone have a good recipe ( Read more... )

I've had one suggestion to take a regular bean salad recipe that's meant for canning, and adjust it with corn and such. But I really don't like to mess with ingredients and proportions on my own - I might get the acidity levels off, or something else could need adjusting that I'm not aware of. I like to be sure my stuff can last in the canning closet for 2-3 years, if needed. I WILL keep all my crossposted entries informed if I get a good recipe!

I read through that thread, and yep, it confirms to me that I really don't want to alter recipes - I want a confirmed 'safe' one, indeed! My quest continues. Thanks for linking me to that!
