So, Dad shocked me by asking for Mexican food for his birthday. He shocked me even more with the fact that he loved the guacamole (something he has not dared to try before his 68th birthday) and the vegetarian enchiladas verde I made better than the shredded pork enchiladas colorado.

The filling for the enchiladas was improvised from some leftover
