I have most of a box of barley in the cupboard. I bought it to make beef barley soup a while back (which was good), but you can only eat so much soup (and when it's 100 degrees, it's hard to want soup, anyway).
So what can I do with this barley? I've spent some time digging around, and there don't seem to be any 'side dish' recipes for it. Is it because it would be awful if I cooked it and served it like rice with dinner?
I'd love some suggestions as to what to do with it. I like barley, and it's good for you and whatnot, but I am just at a loss?
Favorite recipes? I promise porn when I make some...
