So, I take my lunches to work, I don't have time to cook, and it's too hot to stand over a stove anyway. Normally, I'd be perfectly happy with leftover rice, beans, and cheese in a bowl, but I'm looking for a way to minimize the prep time of making dried beans into something tasty

chickpeas, ditto, with thin carrots, celery, and a vinaigrette with a dollop of catsup and also delish.
good for hot weather.

3/4 cup lentils
5 cups water
2 cups tomato-based salsa
1 chopped onion
salt
Combine, bring to boil, lower heat, cover and simmer 45 minutes. Good with chopped green onions & sour cream, or rolled up in a tortilla...also good with a poached egg on top.

In the meantime, I have the following:
Red Beans & Rice -- Makes 4-6 servings
1 lb spice smokes sausage, cut into 1/2 inch slices
2 (15 oz) cans small red beans, drained
1 green or yellow bell pepper , chopped
1 jalapeno chile, seeded and finely chopped
1 (15oz) can peeled diced tomatoes in juice
1 small red onion, chopped
1 cup uncooked rice
In a slow cooker, combine sausage, beans, bell pepper, jalapeno chiles, tomatoes and onion. Cover and cook on low 5.5-6 hours
Meanwhile, cook rice according to package directions. Spoon cooked rice into individual soup bowls or one large serving dish. Top with bean mixture.
