I was recently diagnosed as a diabetic, and as a "foodie" this seemed at first like a major blow to my lifestyle. I felt like this severely cut into the variety of foods I could eat. But I've changed my mind about that. I now think it's an opportunity to challenge myself. I'm trying to think not about what's not available to me, but what I can ( Read more... )

You know, if there isn't a community for diabetic cooking, there should be. Because I'm diabetic, too, and I refuse to give up tasty, interesting meals just because I have to watch everything I eat now.

Your stew sounds delicious.

I've had Type 1 diabetes for 20 years, and I think if you manage your diabetes around your food, it can work out. I find it a bit easier to correct for differences in meals using insulin, if you're a Type 2 on just medication or diet/exercise, it can be a bit more challenging, but certainly not impossible.

I'm not insulin dependent, just on medication, but I feel that I'm up to the challenge of changing my diet. I think that my love of a variety of foods is going to be a help, not a hinderance, since it gives me more eating options.

I'VE FOUND THAT AS LONG AS YOU EAT IN MODERATION YOU CAN EAT ANYTHING YOU WANT....I HAD A HARD TIME CONTROLING MY SUGARS FOR A LONG TIME BUT I HAVE IT ALL UNDER CONTROL NOW....FLAX BREAD IS GOOD!!!...LOW FAT DOESN'T HAVE TO BE BORING....GOOD LUCK..
