hey guys,

I bought some tilapia today and I'm not sure what's the best way to cook it... I'm looking for recipes at the moment but if anyone has a really great idea i'd love to hear it.

Also I'm thinking about making cuban-style black beans... any chance anyone has a recipe for that?

Thanks!

Butter, olive oil, shallots, minced garlic and rosemary. Salt and pepper to taste. Cooked in the oven or on the stove.

I ended up marinating it in olive oil, lemon, cilantro, sugar, pepper, salt, and chili peppers, then baking it for 20 mins and broiling it for 5. MMM!

Oh, that sounds great! I have enough left for at least two meals, so I think i'll make it like that next time.

Do you have a recipe for the amounts of coconut milk and ginger? And is there anything else I should add?

For the tilapia, en papillote (in paper). I like to throw in some white wine, salt and pepper, carrots, celery, and onion. Then close up the wax paper like a little package, and bake in the oven. Yummy.
