Dinner help

morning all...

totally didn't plan for dinner tonight. hubby is cooking. need something easy he can make w/ a flank steak, something other than fajitas, pepper steak or stir fry. To top it off, he hates most casseroles and stews. I'm just out of ideas! please, help!

Marinate the flank steak in soy sauce & garlic for at least 30 minutes, more if you have time.

Remove flank steak from the marinade and pat dry. Sprinkle salt & pepper on both sides, or throw in some grill seasoning if you've got it on hand.

Grill on an outdoor grill if you have one until seared on each side but still medium-rare inside men love doing that anyway! or I've even grilled on my indoor with fab results. Cut on the bias.

Serve with baked potatoes, or a store-bought potato salad, or a loaf of crusty bread, and a garden salad.

Quick & easy.

Tomato salad (tomatoes, basil, balsamic, olive oil, pepper, maybe some feta). Cucumber salad (cuke, dill, vinegar, pepper, salt). Roasted asparagus (a bit of olive oil, salt, pepper, plus the asparagus). Steamed broccoli sauteed in olive oil that has already had garlic and ginger frying in it. Tabouli (bulghur, cubed tomatoes and cuke, parsley, a lemony dressing).

Er, unless you weren't thinking of side dishes?

Teriyaki
*cut into strips, marinate in equal parts mirin, shoyu and brown sugar
*slice up garlic, green peppers & either spring onions or regular ones
*sautee onions & garlic
*add meat (reserve marinade)
*add peppers
*when cooked, remove from pan & add marinade to pan
*reduce marinade - allow to thicken slightly
Serve over rice or asian noodles with sauce as desired.
