New Year's Resolution

I lost 25 pounds over the course of 2010.  My goal for 2011 is to lose another 15.  I'm not dieting. Instead I'm choosing to eat more healthily. This year I quit fast food - Arbys, Wendys, McDonalds. This year my resolution is to eliminated convenience foods and processed foods and cook for myself instead, even if it's just throwing a baked potato ( Read more... )

Oh, man, I sympathise with this. Cooking when you're the only one eating... I don't have your patience, because when I have to cook for myself, it usually winds up being that potato or some eggs or something. By the time I'm done cooking a "proper" meal, I've lost the desire to eat it. I know all about this, good on you for sticking with your plans!

Part of the problem is time and energy. By the time I get home from school, I'm tired and don't want to fix something that takes much preparation. And then then problem with the freezing becomes remembering to take it out of the freezer so it'll thaw by the time I get home.

I'm also planning to make buttermilk biscuits today (which are Not British biscuits at all).

I recommend microwaves for quick thawing purposes. Works a treat for things like bread and frozen meals (of a homemade or other persuasion.)

Biscuits! Ooh, you're making me hungry... I'm going to go looking for some snack food :).

I admit that cooking for one is easier if one is the sort of person who doesn't mind eating the same thing several days in a row. Confession: I make a big pot/bowl/casserole of something on the weekend and eat it for the entire next week. I realize I'm a little strange that way; I can't seem to convince anyone else that a week of pot roast/chicken stew/white bean vichysoisse is the way to go ...
