Pappa al Pomodoro (Tuscan Bread and Tomato Soup)

With all the bread making attempts, we frequently have some leftover stale bread. I imagine this soup would also be great during the summer for those of you with a surplus of fresh tomatoes. That looks fantastic! I hope we get a big batch of tomatoes from the garden soon so I can give it a try! I suppose it would be OK to use part fresh tomatoes and part canned, too...

Sometimes in the winter, when the fresh tomatoes looked really pale but were still expensive since they were out of season, I just went ahead and used all canned tomatoes. Not quite as good as all fresh but still plenty tasty. For me, the goal was to make the stale bread edible so I was still happy.
