I had a similar development from picky eater to open-minded one. The biggest thing I discovered was that I didn't like vegetables because they were not cooked properly. Warmed over green beans from a can ... ugh. Fresh green beans lightly steamed are another story entirely.
My cousin's wife refers to Mexican food as "a food group" and if there was only one cuisine I could eat for the rest of my life, that would probably be it. I don't know what it is about it! Maybe it's the cumin.
