Can anyone recommend some fics with good Giles and Xander interaction? Can be slash, father/son or mentorship, I don't care. I'd really like it if Ethan is there too, without making it an all-human AU!

Have you read The Giles Thing by drsquidlove? It's incredible, slashy and Ethan makes an appearance too.
