I would definitely have to go with an international cuisine menu wise because I love food from various cultures and am interested in learning / experiencing others I haven't already. I'm not sure how I would design it or name it yet, but I do love the idea of having maybe a two story building.. maybe mosaic style windows kinda like at church with ( Read more... )

Here's the thing: you're young. You have time to finish this degree, get some business experience, work up an airtight business plan for investors, save up the money, and go back to culinary school in a few years. It sounds like a dream come true, honestly, and I don't see ANYTHING unrealistic about planning for it. <3! I'd be your #1 patron!

PS: My answer? I want the obligatory bed and breakfast + cafe in Canada. I'd go freaking WILD decorating the rooms. I'm thinking four rooms? Plus movie room, game room, lounge, dining room, deck(s), etcetera. Decor would be warm/cozy and modern. I am a narcissist, so it would reflect pretty closely my own. The cuisine would be Lindsay -- I guess homestyle, but ... you know how we cook. Light, healthy, locally-grown. Cafe would be open to the public, and we'd pack carry-along lunches for hikers and adventurers. And it would be *wonderful.*

As for a name: I have no idea. I'll know it when I hear it.
