I think it would have been perfectly acceptable to say calmly, "I'm sorry, but I've worked really hard on those drawings and, while I'm sure your hands are quite clean, our hands still have oils on them which can damage the artwork, so why don't I show you how to best flip through that?"
Or, just take it off of her and say you'll 'show her a few of the best'... then when she goes to touch, give her the oil speech and tell her you're not very touchy feely so when she talks to you, it would be cool if she could give you a wee bit of space.
If she takes offense, no real loss as she'll leave you be, right? ;)
My high school art teacher used to go around putting paper towels beneath our hands which we inevitably rested on our canvases, paper, sketbooks, etc., yelling in his Hungarian accent, "Yet your LAAAARDY hands and fingers off of your masterpieces!!" ;)
