So here it is, yet again the night before departing for an event and I'm cooking this time. No garb, no armor, no packing.... nope, this lost sleep is going to perfecting my breakfast recipe, and starting the bread.

A sponge in bread terminology is the part that is going to be left out to rise and then mixed in with the rest of the flour to provide leavening for the bread.
