I think we did get glimpses of Sam, and the blue-flashy-eyes thing was what it was supposed to be--the transition from Sam to Gad and back.
S1-S5 are very re-watchable (S1-S4 the most so for me), but I like these later seasons okay, and most episodes have something to recommend them--primarily Jensen/Dean. It's a different show now, but these past two episodes have been exciting and interesting, so I'm okay with that. I do want to get the boys to the relationship you describe--a mature, comfortable, balanced version of what we used to have. It will be different, simply by virtue of everything they've been through, but getting back to a place where they actually like each other would be great.
Even Sam said in S7 that Dean wouldn't have to look out for him all the time anymore and he could go on with his
